For culinary adventurers, it is shaping up as one of the world’s most exciting places to table-hop, with so many cuisines—from new-age Cantonese to off-the-wall tapas—that one could spend months tucking in and not exhaust the supply of innovation. Immigration has left its indelible stamp on the cultural, visual and culinary life of the city, home to people from 233 countries. These days, comparisons to Sydney or classic European capitals seem superfluous: Melbourne’s sense of self is firmly in place.
