Est, which is located in the chic Establishment hotel, was named Restaurant of the Year in 2006 by the Sydney Morning Herald’s Good Food Guide, an Australian version of Michelin. Since opening in 2000, it has drawn Sydney establishment types who can finally enjoy business lunches in the Central Business District in stylish surroundings. On the second floor of the landmarked building, diners sit on velvet couches beneath an antique tin-pressed ceiling and dine on fantastic Mod Oz food by master chef Peter Doyle. The pretty private dining room, with silk paneled walls and chandeliers, holds up to sixteen.

When Sydney’s beautiful people want to see and be seen, they head here. The famed Bondi restaurant is hyperbole-inducing—wraparound floor-to-ceiling windows with panoramic views of Bondi Beach, and the artful Mediterranean dishes are simply but expertly executed. Fashion editors, models and celebrities all rub elbows here, but the mood is refreshingly unpretentious: chalk it up to that casual Bondi spirit. A regular sight: a few girlfriends in flip-flops and tank tops stopping by to enjoy a bottle of Dom Perignon while they sun themselves out on the terrace.
