bills

The three bills cafes are the places to brunch in Sydney. Bill Granger—another of the city’s perpetually sunny-natured celebrity chefs—has perfected the art of delicious yet basic food in convivial (if noisy) surroundings. His cookbooks have become international best-sellers because he celebrates keeping things simple. Blackboards serve as menus and his ricotta hotcakes with banana and maple syrup are considered a Sydney icon right up there with the Opera House. Tip: In Aussie speak: a flat-white is similar to a latte and a short black is a single espresso shot.

Sopra

Located above Fratelli Fresh, the hippest gourmet food store in town, this café is getting a reputation as a destination in its own right. Chef Andy Bunn’s creations are produce-driven and simple—Sopra’s menu, written daily on a blackboard, might feature gorgonzola, walnut, and witloof salad one day, and Jerusalem artichoke soup with blue swimmer crab the next. But like so many of the other good things in life, you’ll have to get in line—there’s a perpetual queue. Tip: The free cooking classes at Fratelli Fresh fill up months in advance, but occasionally someone doesn’t show up, so inquire while you wait. You could learn to make fresh pasta before you eat it.
