Kyubey

Gourmets agree that this is one of the very best places in Tokyo to sample sushi, which means it’s among the finest on Earth. Chefs at Kyubey and similar restaurants rise at dawn to search the close-by Tsukiji fish market, the world’s largest, for the absolute choicest fare. Though housed in a modern building, this family-run restaurant has a seventy-two-year history. The owner, Yosuke Imada, learned to make sushi from his father, who started the restaurant in 1936. Sushi connoisseurs speak the word “Kyubey” almost reverentially; reservations are essential.

Saiseisakaba

Yukari Pratt Sakamoto, the author of Food Sake Tokyo recommends:

“On the back streets of Shinjuku Sanchome is this friendly tachinomi (standing bar). Designed with Showa era items so it feels like stepping back in time. The shop features grilled innards but you can have some items sashimi style. Brains are creamy and the yudetan (boiled tongue) is tender.”

Yamariki

Yukari Pratt Sakamoto, the author of Food Sake Tokyo recommends:

“This institution has been around since 1925, Yamariki is often ranked as one of the top ten izakaya in the city. It is in the shitamachi district of Morishita. Their signature items are a nikomi made from cow innards, port wine, Hatcho miso, sugar, and bouquet garni. The other house specialty is the yakiton or grilled pork bits on a skewer.” Closed Sunday.
