Vosges Haut-Chocolat
What started as one chocolatier’s vision in Chicago nine years ago has expanded into a mini-empire with boutiques (so-called Purple Houses) in Las Vegas and two in New York. Founder Katrina Markoff first fell in love with chocolate while studying at Paris’ Cordon Bleu cooking school and launched her company in 1998. Her innovative creations include a huge variety of fine truffles, using such ingredients as exotic spices, olive oil, sea salt, dulche de leche and ancho chili. There are also high-quality chocolate bars, a variety of gooey cookies and, launched this year, four “haute glaces” ice cream flavors, including the surprising wattleseed (an Australian spice), which tastes like a combination of hazelnut, coffee and chocolate combined. Markoff’s newest boutique on Madison Avenue is a gorgeous all-white room that provides the perfect backdrop for her collection of gourmet treats. The chic gift sets come in Vosges’ trademark purple boxes tied with a satin ribbon.
