Don’t make the mistake of planning a “quick” wine and cheese tasting at Park Hyatt’s glossy, intimate Vintoteca bar (with a 3,500-bottle wine list and forty cheeses) before heading out to a big meal. After a few glasses of Malbec (try a Finca Altamira or Angelica Zapata) via cuvenée, it’s easy to lose self-control during a trip into the cheese room. Sample the soft, smoky Italian Taleggio, Alpe del Garda and Gruyère, or whatever the on-site cheese specialist recommends, and you won’t be hungry until the next day. If you’re with a big group, book the twelve-seat marble table for a private wine-and-cheese pairing with the sommelier.
