L’Atelier de la Cuisine des Fleurs

For lunch or dinner, book a cooking class at l’Atelier de la Cuisine des Fleurs, located on the upper floor of a stone village house, with a dramatic view of gorges. In 2007, chef Yves Terrillon dreamed up this culinary workshop, featuring a menu of imaginative recipes centered on edible flowers. Violets from nearby fields are given top billing (after all, Tourettes-sur-Loup is France’s violet capital): pan-fried foie gras drizzled with violet preserves, and fresh violet petals wrapped in filo pastry. Terrillon will also show you how to cook with begonias (crunchy and fruity), pansies (velvety and nutty) and nasturtiums (peppery, like radishes). Highlights might include crayfish brochettes with rosemary and violets, a coquilles St. Jacques carpaccio garnished with borage (known as the “oyster-flower” because of its sea-salty taste), and a hot chocolate soup with fresh litchis and roses. Coming this summer: a tearoom downstairs, serving a variety of herbal beverages, rose shortbread cookies and other flower-studded goodies.
