We will be in Seville for three days, staying at Hotel Alphonse XIII (San Fernando 2; (34) 95-491-7000; www.luxurycollection.com), and need recommendations for restaurants for lunch and dinner. What would you suggest? K.S., NY

The following restaurants are our top recommendations in Seville. For the ones with Web sites, you can make bookings online. Remember, the Spanish eat much later than we do, with lunch often beginning at 2 pm, and many restaurants do not serve dinner until 9:30 pm.

A beautiful setting for serious foodies: Since you are not staying at the Hacienda Benazuza (41800 Sanlúcar La Mayor; (34) 95-570-3344; www.elbullihotel.com), it would be well worth it to book a dinner at one of its three restaurants. Spain’s celebrated chef Ferran Adrià owns the hotel and helped design the menus. The manor house is an exquisite setting and has a fine dining restaurant called La Alqueria and a more casual La Alberca, both of which are open for dinner and serve modern tapas inspired cuisine. (The third is a traditional tapas restaurant called La Abacería).

Three long-time city favorites: Restaurante Poncio Triana Calle Victoria 8, (34) 95-434-0010. www.ponciorestaurantes.com. An old world atmosphere as you would imagine formal Seville society prefer with excellent traditional food, but a long cab ride. Worth it for some of the best food in the city.

Restaurante Egaña-Oriza, San Fernando 41; (34) 95-422-7254; www.restauranteoriza.com. This is very near the Alphonse XIII hotel and has long been considered the chicest place to eat in the city.

Casa Robles, 58 Calle Alvarez Quintero; (34) 95-456-3272; www.casa-robles.com. Casa Robles and its sister restaurant (slightly less formal) Robles Placentines (Placentines 2) are family-run spots that serve traditional Sevillan food with great wine selections in very pretty dining rooms. You can book on line.

For great food in more casual surroundings: Eslava, Eslava 3-5; Barrio de San Lorenzo; (34) 95-490-6568. Very popular lunch spot that serves modern tapas in simple space.

Naranja, Relator 21-B, 95-491-5080; www.cocinanaranja.com. Stylish restaurant with sleek design and good international food if you become tired of Andalucian fare.

For nice outdoor terrace: Restaurante Modesto, Calle Cano y Cueto 5; (34) 954-416-8111; www.grupomodesto.com. Very good tapas and outdoor tables for lunch or a late dinner. Near the Murillo Gardens and known for its seafood.

For a tapas dinner, two of the best in town are: Cervecería Giralda, 1 Calle Mateos Gagos; (34) 95-422-435. An institution in the city for an old-world tapas experience. The historic vaulted rooms have walls covered with photos of famous torreadors. Daily choices are scrawled on chalkboards; food is authentic, delicious and draws crowds willing to stand at the bar but there are tables too.
