Eight K stands for 8,000 feet, the elevation of the gourmet restaurant in the Viceroy Snowmass, which has quickly become one of the top dining spots in the region. In winter, the fireplaces, candles and walls of wine create a cozy clubby feeling; in summer, the views steal the show. The lunch menu consists of typical sophisticated salads and sandwiches (roast turkey blt and a beef pot roast sandwich are winners) for a refined refueling for skiers and hikers, but it’s dinner that earns the accolades. The Cajun-influenced menu features starters such as a spicy shrimp and grits plus addictive bacon and green onion hush puppies.
