Declared by some to be the “holy grail” of beef in Tokyo, this small, modest restaurant resides under a Tully’s Coffee in the basement of a business building in Nihonbashi. It's marked by only a small sign, and patrons must take the elevator or walk down a flight of stairs from the street to enter the five-table restaurant (there is counter seating, too). The menu is not extensive so as to emphasize the highlight—the kobe or wagyu beef that literally melts in your mouth. There are other highlights on the menu as well: the salmon and crab appetizers are amazing. At Shima, the food, the upbeat atmosphere and strong service come together and ensure reservations are hard to get.
