Pelegrini, set just above the main square of Sibenik, is considered one of the best restaurants in Croatia, serving elevated Dalmatian cuisine reinterpreted and prepared with seasonal ingredients and bold flavors. Chef Rudolf Štefan is proud of his dishes, and therefore does not stray from the three-course tasting menu prerequisite. The best seats are in the old stone dining room or at one of a few outdoor tables overlooking the square and Cathedral of St. James.

Zori Restaurant

Set on the lagoon of Palmizana, Zori is an island restaurant located a ten-minute boat ride from Hvar that boasts an incredible setting and seafood. Guests arrive at the family-run spot by boat and are treated to an idyllic seaside retreat that is a favorite with the Dalmatian Coast boating crowd. Chef Iva Tomlinovic emphasizes the freshest ingredients that her husband Renato sources daily in the Hvar market and from organic farms. Her parents opened the restaurant thirty years ago, and the menu still highlights regional fare. Favorites include goat cheese with truffles, fresh scampi, risotto with baby shrimps and rocket, bison burger and grilled fish of the day. An Indagare member raves, "At Zori I had the best lobster I've ever had." Note that next door is a great bar called Longanini.
