Pizza probably isn’t at the top of anyone’s must-eat list in Copenhagen, but Baest should be included on any foodie itinerary—because it’s outstanding, and because at some point you will likely need a break from nouveau Nordic cuisine. Opened by the Michelin-starred Copenhagen chef Christian Puglisi, the man behind Relae and Manfred’s, this refined pizzeria serves market-driven Italian fare accompanied by a mainly organic wine selection. Everything from the food—i.e., housemade charcuterie and mozzarella—to the presentation—dramatic bowls carved out of white marble—has been well-thought-out and perfectly executed.

A lively Italian restaurant just across from the Hotel d’Angleterre, FIAT (stands for Fondazione Italiana Alimentari Totale) serves lunch and dinner in a series of airy dining rooms. The menu offers typical Italian fare such as minestrone, carpaccio, pasta and grilled fish and meat. Its delicious brick-oven pizzas include one topped with pancetta, potatoes and pine nuts.

Another one of Copenhagen's heavy hitters, Geranium has three Michelin stars, but is slightly easier to get into than other restaurants. The sweeping park views feel a bit like those from New York's Per Se. If you don't have time for the many-courses tasting menu dinner, go for lunch instead where a meal lasts around two to three hours. Dedicated foodies should not miss this restaurant.
