In the summer of 2016, Noma alumnus and chef, Kristian Baumann, opened 108 just footsteps from Noma’s former location on the banks of Christianhavn in a refurbished warehouse. Once an apprentice of Rene Redzepi and a former sous-chef at Relae, Baumann has quickly made a name for himself as one of Copenhagen’s top chefs. Boasting a Michelin star, 108 balances the art of being both casual and polished. Set in a minimalist space that has been perfected by modern Danish design, the interior shines almost as much as the menu with steel and oak bar stools and custom-made cutlery and flatware. The menu is the real star, however, and all dishes are locally sourced, sustainable and simply delicious. Guests can expect anything from glazed pork with pickles to miso-glazed monkfish and wild black currant sorbet depending on the season.
