For a good old-fashioned British meat feast, look no further than Smokestak chef Neil Rankin’s fabulous restaurant in Soho. Put yourself center stage in this underground smoky den by sitting at the counter around the open kitchen, where tacos are hand-pressed, flatbreads are tossed and entire animals are butchered and roasted over the embers. Championing whole animal cookery, everything from snout to tail is used: You’ll see fat being rendered for flatbreads, and bones brewed into broth. There are no appetizers or entrees on this unconventional menu. Instead, diners are invited to graze on tacos filled with raw soy-cured beef, sharing plates of spicy Thai larb, smoky mutton koftas and fresh flatbreads—all washed down with sips of mezcal and bourbon. Just expect to go to sleep with the smell of campfire in your hair.
