One reason that St. Paul de Vence is widely considered one of the prettiest towns in France is that very little has changed in the fortified village for five hundred years. But one recent change has been welcomed by even the region’s most passionate preservationists: the flourishing of Le Tilleul, a charming restaurant just inside the village ramparts. Chef Stephane Marie serves wonderful contemporary interpretations of Provençal cuisine such as creamy pea soup with chorizo, croutons and goat cheese foam; sashimi of tuna with lemon and coriander; foie gras with onion chutney and scallops cooked in a wok with ginger, shitake, coconut milk and curry. In warm weather, most diners sit at tables beneath a massive linden tree, for which the restaurant was named, but there are also tables inside a cozy dining room. As the restaurant is open from breakfast through to dinner, with an afternoon service and take-away place next door, Le Tilleul and its owners have really become neighborhood ambassadors who have added heart and soul and a gathering place to the town. Proof of just how beloved the scene and the food are: Colombe d’Or regulars such as Bernard Henri Levy and Arielle Dombasle have even become frequent diners. Without too much formality, Le Tilleul delivers excellent Provençal food and ambiance—just as it should be. Don’t miss the owner’s charming gourmet boutique next to the restaurant, La Petite Vigne, which sells a great selection of local olive oils, honey and wine.
