Two young Asian chefs, Ryunosuke Naito, who is Japanese, and Kwen Liew, who is Malaysian, joined forces to open one of the more inspired restaurants on the Left Bank. Pertinence blends their reverence for French cuisine with the simplicity and spices of their Asian heritage. The result: delicate dishes such as blue lobster salad with peaches or turbot with parsley and chanterelles.
