Adare Manor's magnificent façade is a towering confection of slender spires, turreted peaks and elegant gothic windows. The original structure dates back to the 17^th century, but the majority of the manor house was constructed in the 1800s and was owned by various royals and prominent families before becoming a hotel in the late 1980s. In 2015, Irish multimillionaire JP McManus purchased the property and oversaw a two-year renovation to provide Adare with the royal interiors it deserves.

Arriving to the castle—either through a long driveway that wends through a portion of the 800-acre estate or by helicopter on the Tom Fazio–designed golf course—one sees the crenelated roof rising in the distance and then finally the magnificent edifice. The setting is certainly picturesque, on the shores of River Maigue with lush hills spilling out in all directions.

Interiors feature soaring columns, cathedral ceilings, plush velvet-upholstered furniture, silk damask cushions and glittering chandeliers. Furthermore, the grand sitting room, decorated in hues of lemon yellow, cream, champagne and scarlet is lavish, but welcoming, with arching windows that look out directly on the manicured French gardens, the rushing River Shannon and the golf course beyond.

The 104 rooms (some of which offer views of the river) are decorated in elegant neutral hues, like soft grey, cream and light champagne, and the large bathrooms are decked out in marble and many have freestanding tubs. The effect is modern and polished with a heavy dose of traditional luxury, though some rooms in the historic section are quite dark and medieval in feel.

The property's main dining room, The Oak Room, is intimate and romantic, illuminated only by candles. Striving for a Michelin star, the chef has curated a menu of gourmet flavors that nod to traditional Irish cuisine. For more casual dining, there is an atmospheric pub, The Tack Room, serving classic fare. Breakfast and afternoon tea are served in the Minstrel’s Gallery, a soaring hall with a vaulted ceiling, original wooden carvings that have been gloriously restored and kaleidoscopic stained-glass windows. Note: It is recommended to book all meals ahead of time, as the dining room can get quite busy and you might have to wait if you just show up.

For those looking to stay active, activities abound on the property. One of the main draws to the hotel is the Tom Fazio–designed championship golf course, which has a grand clubhouse with a bar and views over the green. Falconry and archery lessons are also on offer. Those looking to be pampered can indulge at the La Mer spa, and there is a small gym and indoor pool set beside the river. There is also plenty to see outside the estate’s gates, such as the storybook town of Adare that brims with quaint shops and pubs.
