Review

Set on the banks of the vast Lough Corrib, the grand, 13th-century Ashford Castle was renovated to perfection in 2014 by the Tollman family (whose own daughter is the decorator). The hotel has 80 rooms with 30 located in the original castle. The grand fortress faces a beautifully landscaped terrace that looks out onto one of Ireland's largest lakes, where guests can fish and boat. The interior decor in the public spaces conjure grand visions of royalty, with plush red velvet furnishings, glittering chandeliers, rich mahogany woods and exquisite antiques.

The 30 rooms in the old wing are appointed with classic furnishings, four-poster beds, antiques and original fireplaces. Everything has been carefully thought out, from the painstakingly redone woodwork to the heated bathroom floors. Many have beautiful lake views. For guests looking for privacy, the Hideaway Cottage is a romantic and tucked-away option on the large estate.

The property’s dining outlets are equally inviting: The Prince of Walesbar feels like a throwback to another era, while Cullen’s at the Cottage is a neighborhood hot spot. The grand fine-dining restaurant Georges V serves impeccable French gastronomy with Irish influence, and the Dungeon Bar, outfitted with royal regalia that kids will love, serves more casual fare. For those missing a taste of the U.S., Stanley’s is the property’s American-style diner, serving up cheeseburgers and club sandwiches. As an alternative, guests can eat out at one of the charming restaurants in Cong.

The 350 acre property is home to Ireland’s oldest and most prestigious School of Falconry, where guests can take a “Hawk Walk” with a master falconery. Other activities include guided hikes, lake fishing, clay pigeon shooting, archery, horseback riding and golf. There is a lavish spa on property with an indoor pool (decorated with beautiful mosaics) and a fitness center.
