Israel’s resident wildchild, Eyal Shani, serves up similar cuisine to that served at the Salon, but in a more casual environment. His magic touch makes otherwise simple roasted vegetables spectacular; a meal can be rounded out with several orders of the whole roasted sweet potato (the outside is charred to an unrecognizable crisp, while the vibrant center remains tender) and a couple of heads of cauliflower, dressed up with olive oil, salt and pepper. These signature dishes leave room for heartier entrées and the magnificent desserts, and all the dishes are presented with low-key flair; most of the dishes are served on butcher paper, with nothing else.
