Jean-Georges Vongerichten’s Miami outpost is in a stunningly retro dining room in the Edition hotel on Collins Avenue. The 1950s-inspired interior includes Deco touches as well as references to the Spanish bullfighters in its round space. Cuisine consists of Vongerichten’s favorite elements from Spanish, Caribbean and Latin American food, and the menu is divided into categories like “Light and Bright” (with raw shaved Florida red snapper with green chili dressing) and “Golden and Crispy” (which might be crunchy potato nuggets with spicy-tangy sauce and rosemary aioli). Dishes are meant to be shared, and the lovely waitstaff can offer suggestions for favorites and how much to order.
