As one might surmise from its less-than-subtle name, Beast focuses on nose-to-tail cooking. Chef and co-owner Naomi Pomeroy often highlights one animal each week, serving different cuts of meat each day. Beast is one of Portland’s most upscale foodie venues and offers a six-course, prix fixe menu and two seatings each night (6pm and 8:45pm, Wednesday through Sunday). A 15-minute drive from the city center, Beast occupies a cozy dining room with two communal tables, an open kitchen and blackboard wall, where Pomeroy serves her indulgent, French-inspired Pacific Northwest cuisine. The menu focuses on comfort foods, and while the offerings change daily, patrons can expect something along the lines of saffron gnocchi with roasted tomato and cured pork belly or smoked lamb shoulder with quince glaze, charred escarole and horseradish potato purée. The four-course Sunday brunch is spectacular as well. Reservations required.
