To get a feel for the quality and breadth of wines, stop at Domaine de la Chevalerie outside of Bourgueil. Although the winery has been in the same family since 1640, the new generation has thrived to create excellent and well-priced organic varietals. The estate only gets a few visitors each day, so there’s always someone happy to show guests around for a tasting. There are vast, ancient cellars in the former limestone quarries (the stone was used for building nearby castles from the 11th-13th century) and guests can plan ahead for a private cellar tasting. (Be sure to try the Alcofrinas.). Every Wednesday in the summer months, they organize a special wine tasting event called ‘Les Recres de Mercredi.’
