This fantastic little restaurant is the product of a collaboration between Jérôme Waag, an American chef formerly of Berkeley’s famed Chez Panisse, and Shin Harakawa, a Japanese restaurateur. The focus is on sustainable, organic and seasonal ingredients to produce dishes that showcase both Western and Asian influences—bonito sashimi with salsa verde, paella with edamame and red pepper aioli, a selection of cheeses from Hokkaido, and so on. Don’t miss trying a bottle from the restaurant’s collection of natural wines, which may include a selection produced in Japan (and are surprisingly delicious). Located in the inconspicuous neighborhood surrounding Kanda Station, it’s a pleasure to dine in the honeyed, stylishly designed space.
