Atop a woodsy hillside in the peaceful backcountry, the Château de Saint-Martin was built on ancient ruins of a Knights Templar promontory, but the Old World castle ambiance has little in common with this restaurant's exquisitely modern cuisine. Dining at the elegant, intimate Le Saint-Martin is guaranteed high adventure, ever since Michelin two-star Yannick Franques arrived in 2007. The memorable dishes range from minimalist (an egg wrapped in a brioche topped with unctuous parmesan cream) to inspired (pigeon topped with shavings of chocolate macaroons), crafted with meticulous attention to textures, right down to the perfectly-infused lime Mojito baba au rhum for dessert. Other highlights: the superior wine list and the spectacular panoramic views.
