Opened by Cortina-born chef Riccardo Gaspari, El Brite is one of the city's most beloved agri-restaurants. Gaspari, whose family have been farmers in Cortina for generations, studied with the three-Michelin star chef Massimo Bottura of Osteria Francescana, which has been named by food critics as the best restaurant in the world. He then opened a dairy farm with his wife Ludovica called Piccolo Brite, where the couple produces organic cheeses and meats, and it is on this property that El Brite is located.
Riccardo and his team use the ingredients sourced from the farm itself, which are also available for purchase (they also have a slightly more elegant, gourmet restaurant called San Brite). As Riccardo said, "We live next to the woods, next to our cows. We started from our rural everyday life, where the ingredients of memory are born, to build our heritage.”
