SEARED is One & Only Palmilla’s new fine-dining offering conceived of with the help of famed Jean-Georges Vongerichten and Executive Chef Sébastien Agnès (it has taken the place of former restaurant Market). Housed in the original whitewashed hacienda that is the heart of the One & Only Palmilla, SEARED offers a comprehensive selection of 15 different cuts of beef ranging from Wagyu A5 and Kobe certified to tenderloins and rib eyes. This turf selection is complemented by a host of seafood, including sashimi, whole red snapper and local lobster. There are several menus on offer—Vongerichten also created the in-house dining and dishes for the poolside restaurant, Breeze—each offering a memorable mix of traditional Mexican and innovative interpretations.
