AlpiNN is the latest Dolomites opening from Chef Norbert Niederkofler, Executive Chef of the three Michelin-starred St. Hubertus, where he initiated his cooking philosophy “cook the mountain.” It’s hard to imagine a more idyllic place to watch his cooking philosophy come to life than up high in the mountains at AlpiNN, which can only be accessed by gondola or skis. The restaurant perches over the mountain with floor-to-ceiling windows and panoramic views of the Dolomites. The menu is based on seasonal and regional products, each dish representing the mountains. You’ll find delicious pastas, as well as meat and vegetable plates on the menu. Favorites included pasta e fagioli, a dish that turns the famous soup into a pasta with burnt leeks and puffed legumes, as well as the appetizer, “onion, onion and Sasso Nero,” a crispy-sour onion with cheese. Reservations are recommended.
