As the first certified sustainable sushi restaurant in the world, Bamboo Sushi, a Portland institution with four locations citywide, serves only the freshest fish and partners with such environmentally friendly organizations as the Monterey Bay Aquarium and Blue Ocean Institute. Despite holding itself to the highest standard when it comes to ingredients, Bamboo Sushi offers a vast, wide-reaching menu that caters to vegetarians, gluten-free diets and even meat-lovers (the restaurant serves one of the city’s best burgers). Standout sushi items include the Highway 35, a decadent roll of red crab, spicy sesame aioli, avocado and long bean that comes topped with sake poached pears, eel sauce, tempura flakes and tobiko. The Green Machine roll caters to vegetarians with tempura long beans, green onions, avocado and cilantro sweet chili aioli. Bamboo Sushi’s downtown location is the chain’s most lively address, with bright red barstools, an open kitchen, vibrant wall murals and Japanese lanterns.
