One of many Amsterdam restaurants to offer a fine-dining experience at a reasonable price point, Breda opened in 2015 in an elegant, canal-side space in the posh Jordaan neighborhood. Patrons choose between three set menus (“basic,” “extra” or “the full monty”) and the rest is up to the chefs. The cuisine is mostly international but with a new Nordic feel, and while the menu changes nightly, it might include such delightfully complex dishes as cauliflower fried in beurre noir (black butter) and served with hollandaise, chives and black truffle shavings. Similarly, the dining room is elegant but casual, with oversized windows, white tablecloths, green banquettes and seating that spills out onto the sidewalk.
