Savoy is a super chef at this point, with an outpost in Las Vegas, but his restaurant in Paris remains one of the classic palaces of haute cuisine. Simple, brown and white décor provides a subdued almost Zen-like backdrop that better showcases the chef’s elaborately prepared (and sometimes elaborately presented) cuisine. Savoy, who was awarded Chef of the Year in 2002, is considered a founder of the nouvelle cuisine movement.
