Prior to opening Kabi in 2017, Chef Shohei Yasuda worked at Copenhagen’s two-Michelin starred Kadeau, so it’s only fitting that the menu here incorporates elements of New Nordic Cuisine. However, the 13-course tasting menu experience at Kabi feels distinctly Japanese, and while the menu changes often, past intricate dishes have included pickled mackerel and munster cheese wrapped in spinach and topped with kale powder and smoked eggplant with venison miso and roasted tomato juice. Every item at Kabi has a complex but delightful combination of flavors. Request to sit at one of the 12 seats at the counter.
