This Michelin-starred, rustic-chic Nordic restaurant serves specialties inspired by and purveyed from Bornholm, a rugged island in the Baltic Sea. The four and eight-course set menus emphasize imaginative cuisine and ingredients, such as Norwegian lobster with walnut and lavender; smoked salmon drizzled with rosehip vinaigrette; and scallops served with pine flowers. The menu can be accompanied by a wine pairing of organic varietals.
