La Tasquería de Javi Estevez derives its name from a combination of the words tasca, meaning tavern, and casquería, meaning a shop that sells tripe and offal (the edible entrails and internal organs of an animal). A cozy restaurant on a quiet street in the neighborhood of Ibiza, adjacent to Salamanca, La Tasquería draws crowds of locals for late lunches and dinners.
