La Tasquería de Javi Estevez derives its name from a combination of the words tasca, meaning tavern, and casquería, meaning a shop that sells tripe and offal (the edible entrails and internal organs of an animal). A cozy restaurant on a quiet street in the neighborhood of Ibiza, adjacent to Salamanca, La Tasquería draws crowds of locals for late lunches and dinners. Best for adventurous eaters, the menu is comprised of delicious twists on various tripe and offal; one of the most popular dishes is a whole pig's head.
