The charming restaurant of the eponymous hotel in Le Bois Plage is a great dinner spot, if you’re staying in St.-Martin or even Ars (both a short taxi ride away). The white-paneled dining room, with nautical décor and turquoise accents, looks like it might also be home at on Nantucket or in Montauk, but the menu is très français. You can’t ever go wrong with the plat du jour, especially if it features such local treats as vanet, a distant cousin of a scallop that does not travel well, meaning you can only get them on-island). The wine list is fabulous, too. Reservations are a must during the high season.
