For those seeking the city’s best speakeasy, look no further than Panda & Sons, located in what looks like a vintage barbershop. Upon entering, guests walk down a staircase to find a bookshelf that opens to reveal the Panda & Sons Bar—reminiscent of a classic pub once you are inside. The cocktail menu, called Transcend, is a tour through different freezing techniques from sous pression to cryo concentration. Iain Mcpherson and Nicky Craig led the research and development to create the menu, seeking to expand each individual’s flavor spectrum by spotlighting how freezing techniques can influence taste. This is a fun and unique bar that will play with how you experience cocktails.
