Anselme Selosse who runs Les Avisés (a stylish 10-room boutique hotel just outside of Épernay) made a name for himself as a pioneer of biodynamic Champagne. For his hotel’s upscale neo-bistro with a long chef’s table, Selosse has brought in Stéphane Rossillon, who honed his skills at the Michelin-starred Maison Pic (285 Avenue Victor Hugo) in Valence.
