The top fine-dining restaurant at Britannia Hotel, Speilsalen is the first signature restaurant of chef Christopher Davidsen, who won a silver medal at the international Bocuse d’Or chef championship in 2017. Set in an opulent mirrored salon, Speilsalen, which offers both individual tables and a chef’s counter with views into the open kitchen, serves exquisite tasting menus of six or 10 courses, crafted by Davidsen and his talented young staff—many of whom compete on Norway’s national culinary team. Beautifully plated dishes may include langoustines with apple and red curry; Jerusalem artichoke with Brussels sprouts and black garlic; and Norwegian salmon with horseradish and mussels.
