This family-run company has been producing traditional cheeses since opening in 1906. Unique in flavor and appearance (they tend to have a woody taste and small white spots of minerals), Reypenaer cheeses are matured for years in a warehouse outside of Amsterdam using a natural ripening process. Reypenaer XOReserve cheese, which is matured for years, has no lactose by the time it is done. Cheese connoisseurs, or those looking for a great souvenir for foodies back home (the cheeses don’t need to be refrigerated and are allowed through customs), should pop into the shop on Singel, which also offers cheese tastings.
